De Halve Maan is a genuine working brewery, not a museum. You walk through active fermentation tanks—copper vessels, grain smell, the real mechanics of Belgian beer-making—then descend to a bar that feels earned, with windows framing the medieval roofscape of Brugge. The house beers (Brugse Zot, Straffe Hendrik) are crisp and well-kept. Service is straightforward, pacing is yours to set. The brewery tour is informal and worth doing; the bar alone is worth the walk. Expect tourist traffic at lunchtime and weekends, but weekday afternoons hold a calmer, more local rhythm. No pretence, no branded merchandise overdrive—just a working brewery that happens to pour very good beer.
